At 4 mil thick, nitrile is the most puncture-resistant of the glove materials we carry, and it molds to the hand so the fingers keep their feel through a long shift. Powder-free and latex-free, so there is no powder near the food and no latex allergy to worry about. The black color hides sauce and grease between tasks.
